Vanilla Cream Brownie Pie

They say opposites attract, and we say its because they complete each other. Take vanilla and chocolate for example—two halves of an irresistible dessert whole. What could be a better pairing for our rich, decadent dark chocolate brownies than fluffy and light vanilla cream?

With that thought in mind, we combined the two to create a delicious Vanilla Cream Brownie Pie. Many cream pie recipes call for chocolate cream filling, but we think the vanilla cream brings out the richness of the fudgy Belgian dark chocolate crust for an even more amazing dessert experience.

This scrumptious brownie cream pie is easy to make at home and so perfect when its done that everyone will wonder if it was professionally baked. Give it a try!


  • 6-8 Original Fairytale Brownies
  • 1 cup sugar
  • 3 eggs
  • 6 heaping tbsp cornstarch
  • 4 cups milk
  • 2 tsp vanilla
  • 3 tbsp butter
  • 3 cups whipped cream (Cool Whip or homemade)
  • A semi-sweet chocolate bar for shaving


For the vanilla cream filling (make this first!):

  1. Mix sugar, eggs, and cornstarch. Blend well.
  2. In a medium saucepan, scald 4 cups of milk. When it begins to rise, add the egg mixture from step 1.
  3. Stir constantly until the mix boils
  4. Remove from heat and add in vanilla and butter. Stir well.
  5. Let cool before pouring into the pie crust.

For the brownie crust:

  1. Unwrap and crumble the brownies.
  2. Firmly press brownie crumbs onto a 9- or 10-inch pie pan.

To complete the brownie cream pie:

  1. Once the filling is cool, pour it into pie crust.
  2. Top with whipped cream.
  3. Shave chocolate and sprinkle over whipped cream.
  4. Refrigerate for at least 2 hours. The pie will stay fresh and tasty for up to 3 days in the fridge.
  5. Serve and enjoy!
